I thought I would help you out this weekend by sending you this great Valentine’s recipe.  So, skip the store bought chocolate and go off the radar by putting together these quick and easy Strawberry Cheesecake Minis.

Makes: 12 servings

Prep Time: 15 minutes

Bake Time: 15 minutes + cooling



2 packages (8 oz each) Reduced Fat Cream Cheese

½ cup Coconut Sugar (health food store)

½ cup Sugar

1 tsp Vanilla Extract

2 Eggs, lightly beaten

12 Reduced Fat Vanilla Wafers

1 can (12 oz) Strawberry Cake and Pastry Filling

1 package muffin tin liners



  1. Pre-heat oven to 350-degrees.  In a small bowl, beat cream cheese until smooth.  Gradually beat in coconut sugar and sugar.  Beat in vanilla and eggs.  Beat until blended.
  2. Place each vanilla wafer flat side down in a foil-lined muffin cup.  Fill with cream cheese mixture.  Bake at 350-degrees for 15-20 minutes or until puffed and set.  Cool on a wire rack for 1 hour (centers will sink slightly).
  3. Spoon pastry filling into the center of each cheesecake.  Store in the refrigerator.


Nutrition Analysis (1 cheesecake): 220 Calories, 9 grams Fat, 29 grams Carbohydrates, 1 gram Fiber, 5 grams Protein.
